I made (yes, the 17 year old of the house was the one who made Thanksgiving lunch- because we don’t eat dinner)
…ok, so my mom helped, a little
- Thyme, Pecan and Honey stuffed Turkey Breast Roulades (as opposed to a whole turkey, because I can’t deal with a whole turkey AND don’t want to eat dark meat, or gravy or stuffing- CALORIES GUYS)- yum, if not a little dry. I ran out of honey half way through…
- Jamie’s Cranberry Spinach Salad -( as opposed to Cranberry Sauce- because I don’t like Cranberry Sauce) AWESOME!!!!!!!!!!!! The best thing on the table (and basically all I ate), I used Paul Newman’s Light Balsamic Vinegar instead of making my own sauce because I was lazy but I still added the seeds. I made eight servings, but my dad ate like half of it.
- Organic Whole Wheat Rolls (as opposed to Corn Bread or regular dinner rolls) -Also AWESOME!!!!!!! I was so happy eating this and the salad (my spinach was also organic), I felt so healthy.
- My mom’s mashed potatoes- with Red Russet Potatoes, Olive Oil, Nonfat milk, and herbs, salt and lots of black pepper- too much (my mom made those)
- She also made the rest of the turkey peices (she insisted upon buying the whole thing and cutting the breasts out for me) in a total desi way that wasn’t really that good… (HA! I WIN)
- Vegan Pumpkin Pie (which means low-fat and cholesterol free)- with soy milk instead of eggs and milk. I couldn’t believe this was soy milk, it was so good.
